DIRECTIONS

    Prep the tenderloins: Make small cuts in the connective tissue between the meat and fat, then lightly pound both sides with the back of a knife. Season with salt and pepper. Mix the (B) sauce ingredients (sugar, miso, and Worcestershire sauce).

    Combine (A) ingredients (egg, flour, and water) in a bowl to make the batter. Dip the pork in it, then coat evenly with panko breadcrumbs.

    Deep-fry in oil at 320°F (160°C) until golden brown. Serve with plenty of the sesame miso sauce.
