- 10 2/3 oz cooked Japanese short-grain rice
- 2 3/4 oz kimchi
- 2/3 oz vegan cheese
- 1tbsp sesame seeds
- green onions (to taste)
- 1tbsp sesame oil
- soy sauce (to taste)

Preparation
Cook the rice with slightly less water than usual (just a little bit less is enough).- 1
Chop the kimchi and green onions.

Add the vegan cheese to the freshly-cooked rice. (If you are using leftover rice, be sure to reheat it first.)

Add the kimchi, green onions, and sesame seeds to the rice.

Mix well and shape into triangular onigiri.

Heat sesame oil in a frying pan and toast the onigiri on both sides until golden brown.

Drizzle on little soy sauce at the end for extra flavor, to taste.

Tips & Notes
Tips to keep the onigiri from falling apart:
・Don't add too much liquid from the kimchi.
・Try not to arrange the fillings on the outside when shaping the onigiri. Keeping the rice on the outside will help it stick together better.
・Press firmly when shaping.
