"Takikomi-gohan" is a traditional and healthy Japanese dish where rice is steamed along with various vegetables, proteins, and seasonings. Aromatic ginger pairs with vegetables and soy protein to make a well-rounded, super-healthy, and amazingly delicious bowl of rice in this vegan recipe. When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.

    2cups Japanese short-grain rice (300g)
  • A
    2cups water (scant 450ml)
  • 1 piece of kombu (about 0.17 oz./ 5g)
  • 1oz fresh ginger (julienned, 30g)
  • 1/3 carrot (thinly sliced)
  • 1 piece of aburaage (fried tofu, excess oil removed and thinly sliced)
  • edamame (optional)
  • 1.5tbsp soy sauce
  • a pinch of salt

DIRECTIONS

  • Preparation
    Rinse the rice, add the scant 2 cups of water, and let it soak for 30 minutes.

    Julienne the ginger and slice the carrot thinly.

    Pour hot water over the fried tofu to remove excess oil, squeeze out the water, then slice thinly. (This helps make the rice lighter and less greasy.)

    Add the soy sauce and salt to the soaked rice and gently mix.

    Place the kombu and prepared ingredients on top.

    Cook using the regular rice setting on a rice cooker.

    Once cooked, remove the kombu and gently fluff and mix the rice.

    • Easy to make and turned out great.

    Such a delicious dish! I didn't add kombu as the recipe suggested, therefore I adjusted the water content. I filled the water up to the 2 cup marker in the rice cooker instead of using 450ml as written. The only change I would make for the next time is to add the edamame AFTER cooking, because the edamame beans lose their vibrant green colour when cooked.
