This matcha mousse is rich yet incredibly easy to make with marshmallows.

When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.

  • 1/2 tbsp. matcha
  • 2 tsp. water
  • 3/4 cup milk
  • 2 1/2 oz marshmallows
  • 2 tbsp. heavy cream
  • whipped cream, as needed (optional)
  • matcha (optional)

INSTRUCTIONS

    Sift the matcha through a fine-mesh strainer. Add the water in two parts and stir until fully dissolved.

    Place the milk and marshmallows in a pan and heat over low heat. Once it comes to a boil, remove from heat and let the marshmallows melt with the residual heat.

    Add the heavy cream and melted matcha, and mix well.

    Strain for a smooth texture, then pour into two cups.

    Chill in the refrigerator for 2 hours until set. Top with whipped cream and a sprinkle of matcha.

・Matcha tends to form lumps, so it’s recommended to sift it before use.
・Dissolve it in water rather than hot water, as hot water may cause discoloration.
