Kabocha is very popular in Japan because it is naturally sweet and rich in beta-carotene and other nutrients. Simmered kabocha, cooked with sugar and soy sauce, has been a popular Japanese side dish for generations. If you want to reduce your sugar intake, simply use less sugar.

When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.

  • 1/8 of a kabocha squash (0.5 lb(230g))
  • 1 1/4 cups dashi (300ml)
  • 1 Tbsp sugar
  • 2 tsp soy sauce

    Scoop out the seeds with a spoon and cut the kabocha squash into large pieces. Since kabocha can be very hard, microwave it for about 1 minute before cutting if you want to soften it.

    Place the kabocha in a pot and add enough dashi to cover it. Bring to a boil, then add the sugar and soy sauce.

    Place a sheet of parchment paper on top and simmer for 3 minutes. Reduce the heat to low and simmer for 10 minutes.

    Turn off the heat and let it cool to absorb the flavors.

Tips & Notes

Kabocha becomes soft and can easily fall apart when cooked. To keep the pieces intact, cook over high heat for 3 minutes, then reduce the heat to low and continue cooking.
