Kabocha squash is a type of squash that is commonly eaten in Asia. It is packed with beta-carotene and is a very nutritious vegetable. Compared to Western pumpkins, kabocha has less water and a naturally rich sweetness. Steamed kabocha cakes are a popular treat in Asia. They have a wonderfully chewy texture and are absolutely delicious!

  • 3 oz peeled kabocha squash (80g)
  • 5 Tbsp sugar
  • 1 egg
  • 2 tsp oil
  • 1/2 all-purpose flour (60g)
  • 1 tsp baking powder

    Remove skin and seeds from kabocha, cut into pieces. Prepare 3 oz of peeled kabocha squash. Microwave for about 3 minutes until tender. Mash using the back of a fork.

    Dice the kabocha for the topping and sprinkle it with sugar. Microwave for about 2 minutes, until tender.

    Mix the all-purpose flour and baking powder, then sift together. Combine the egg, sugar, and mashed kabocha in a bowl and mix until smooth. Stir in the oil. Add the flour mixture and gently mix until just combined.

    Pour the batter into four paper-lined cups. Sprinkle the kabocha on top as a garnish. Place a paper towel in a pan and arrange the cups on top. Pour water around them, cover with a lid, and steam for 13–15 minutes.

Choose a kabocha squash that feels heavy for its size, has hard skin, and has bright orange flesh when cut. Cooking time may vary depending on your microwave, so adjust the time accordingly.
