These cheese-stuffed potato mochi have a fluffy potato filling with gooey, melted cheese inside. They're finished with a buttery soy sauce glaze that's absolutely delicious! Wrapped with a strip of nori, these potato mochi have an adorable Japanese-style look.

When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.

  • 14oz potatoes (400g)
  • 1/2tsp salt
  • 3Tbsp cornstarch
  • 2oz cheese (60g)
  • 1 sheet nori
  • as needed oil
  • 1Tbsp butter
  • 2tsp soy sauce

    Peel the potatoes. Place them in a pot and cover with plenty of water. Bring to a boil, then cook for about 15 minutes, or until fork-tender.

    Drain well, transfer to a bowl, and mash until smooth. Add the salt and cornstarch and mix until well combined.

    Divide the dough into 12 equal portions and flatten each into a small round. Place a piece of cheese in the center, then wrap the dough around it and gently flatten it into a patty. Wrap a thin strip of nori around each one.

    Lightly oil a frying pan and arrange the potato mochi in a single layer. Cook over medium heat for 1–2 minutes, or until golden brown. Flip and cook the other side until golden as well. Turn off the heat, add the butter and soy sauce, and gently toss to coat. Serve warm.

Tips & Notes

You can use potato starch instead of cornstarch. Any type of melting cheese works well. I also recommend using mentsuyu (Japanese noodle soup base) instead of soy sauce for a richer flavor.
