    1tsp. shiro-dashi Japanese soup base (or 1 tsp. soy sauce + a pinch of dashi powder)

    toasted white sesame seeds (to taste)

    gochugaru Korean chili flakes (to taste)

    Thinly slice the onion.

    Heat sesame oil in a frying pan over medium heat. Add the sliced onion and cook until softened.

    Add the canned tuna (with oil) and the (A) seasonings (soy sauce, mirin, sake, sugar, and dashi). Increase to high heat.

    Once it comes to a boil, add the udon noodles. Stir-fry until the sauce reduces and coats the noodles.

    Drizzle a little extra sesame oil, plate the noodles, and sprinkle with (B) toppings (green onions, sesame seeds, nori, and gochugaru).
