Refreshing with Grated Radish! Comforting and Delicious Quick Simmered Fish
This classic Wa-shoku (traditional Japanese dish) is made simply at home in just 15 minutes! Even kids will enjoy this one!

- 10.5oz unsalted mackerel (saba, 300g)
- 7oz daikon radish (approx. 4-5 inches)
- A0.5cup water
- A3tbsp soy sauce
- A3tbsp sake (or white wine)
- A2tbsp mirin (sweet rice wine)
- A1.5tbsp sugar
- A1tsp grated ginger (or paste from a tube)

Preparation
Cut the mackerel into single-serving-sized pieces.
Grate the daikon radish.

Add the (A) ingredients (water, soy sauce, sake, mirin, sugar, and ginger) to a frying pan and bring to a simmer over medium heat, then add the mackerel.

Place a drop-lid over the fish (or use parchment paper) and simmer over medium-low heat for 7–8 minutes.

Add the grated daikon radish, including its juice, and cook for 2–3 minutes. (Spoon the simmering liquid over the mackerel occasionally.)

Turn off the heat and sprinkle with toasted sesame seeds.

I used deboned, unsalted mackerel. Bone-in mackerel can also be used, but be sure to use unsalted fish for this recipe.
