Moist and Juicy! Family-Approved Versatile Miso Sauce
This is the ultimate easy recipe that instantly solves problems like "cooking is bothersome" or "chicken breast is dry!"
This "Umami Miso Chicken Breast" is made simply by marinating the chicken in a special miso sauce and baking it in the oven. Moist, juicy, and delicious, it is one of our family favorites!
Since it uses high-protein, healthy chicken breast, it is perfect even for those watching their diets. It can also be frozen in the marinade for meal prep.

When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 12 oz chicken breast
- A1 tbsp sake (or white wine)
- A2 tsp sugar
- A1.5 tbsp Japanese mayonnaise
- A1 tbsp miso (soybean paste)
- A2 tsp mirin (sweet rice wine)
- A1 tsp soy sauce

Pierce both sides of the chicken breast thoroughly with a fork. (Be especially thorough on the thickest parts.)- 1
Place the chicken breast into a plastic bag, rub in the (A) ingredients (sake, sugar, mayonnaise, miso, mirin, and soy sauce), and let sit for 30 minutes or longer. (Marinating overnight will deepen the flavor and make it even more delicious.)

Line a baking sheet with parchment paper, preheat the oven to 450°F (230°C), and bake for 15 minutes. Let it rest and steam in the oven after cooking for an additional 5 minutes.

Once it has cooled down slightly, slice thinly.

The marinade that seeps out onto the parchment paper is packed with umami, so drizzle it over the sliced chicken before serving.
