- 14 oz chicken breast
- 1 medium potato
- A2.5 tbsp Japanese mayonnaise
- A1 tbsp sake (or white wine)
- B3 tbsp potato starch (katakuriko, or cornstarch)
- B2.5 tsp seasoned curry powder (or mild curry powder)
- Bsalt and pepper (to taste)
- B0.5 cup shredded mozzarella cheese
- panko breadcrumbs (as needed)

Dice the potato into ¼-inch (5 mm) cubes and the chicken breast into ⅓~½-inch (7–10 mm) cubes.

Place the potato in a microwave-safe container, cover loosely with plastic wrap, and heat at 600W for 2 minutes.

Once the potato has cooled down slightly, add the chicken breast and the (A) ingredients (mayonnaise and sake) and mix together.

Add the (B) ingredients (potato starch, curry powder, salt, pepper, and cheese) mix thoroughly, roll the mixture into bite-sized nuggets and cover firmly in panko breadcrumbs.

Pour oil into a frying pan about ½-inch-deep and pan-fry both sides over medium heat. Remove the nuggets once they turn golden brown.
