- 16 oz pork tenderloin
- salt and pepper (to taste)
- A1 egg
- A3 tbsp all-purpose flour
- A1 tbsp water
- A1 tbsp sake (or white wine)
- panko bread crumbs (as needed)
- tonkatsu sauce (for serving)
- toasted sesame seeds (to taste)

Preparation
Cut the pork tenderloin into roughly ½-inch-thick disks.

Sprinkle with salt and pepper, as needed.

Mix together (A) ingredients (egg, flour, water, and sake) to make the batter, then dip the pork into the batter.

Firmly press the panko bread crumbs onto the meat. You can simplify this process by putting the bread crumbs in a plastic bag and pressing the pork firmly to ensure that the crumbs stick.)

Pour enough oil to cover about half the thickness of the tenderloin pieces into a frying pan, and pan-fry over medium heat until golden brown.

Flip occasionally, and remove the cutlets once they turn golden brown.

Serve with tonkatsu sauce and sprinkle with toasted sesame seeds, to taste.

・The breaded cutlets can be frozen before frying for later use.
