- 12 1/2 oz fresh salmon
- ¼ of a head of cabbage
- Asalt and pepper, as needed
- A1 tbsp. vegetable oil
- A1 1/2 tbsp. all-purpose flour
- A1 1/2 tbsp. soy sauce
- A1 tbsp. mirin (sweet rice wine)
- A1 tbsp. sake (or white wine)
- A2 tsp. sugar
- A1/2 tsp. grated garlic (or garlic paste from a tube)
- 1/3 oz salted butter
- black pepper, to taste
INSTRUCTIONS
Preparation
Press the fresh salmon with a paper towel to remove moisture. Roughly chop the cabbage.

Cut the fresh salmon into 3–4 pieces, place in a resealable plastic bag, and sprinkle with salt and pepper. Add the all-purpose flour and shake the bag vigorously to coat the salmon evenly.

Heat 1 tbsp. of vegetable oilin a frying pan over medium-high heat. Add the salmon and cook, flipping occasionally, for 2–3 minutes.

Once the salmon is golden brown, add the cabbage and stir-fry for about 2 minutes.

Mix the (A) ingredients together (soy sauce, mirin, sake, sugar, and garlic). Add to the pan with the salted butter, and toss to coat.

Sprinkle with black pepper, to taste.

We used boneless salmon.If using bone-in pieces, be sure to remove them before cutting.
