- 2 thick-cut pork loin chops(about 4.5 oz.each) (cut into bite-sized pieces)
- A1/2 tbsp. all-purpose flour
- A1/2 tbsp. potato starch (or cornstarch)
- Asalt and pepper, to taste
- B1 tbsp. soy sauce
- B1 tbsp. mirin
- B2 tsp. sugar
- B1 tsp. grated ginger (or ginger paste)
- B1 tsp. miso (preferably awase miso)
- 1 tsp. vegetable oil
- freshly-ground black pepper, to taste

Cut the pork chops into bite-sized pieces. Season with salt and pepper, then coat evenly with the flour and starch.

Add vegetable oil and pork to a cold skillet. Turn the heat to medium and sear until both sides are nicely browned.

Blot away excess oil with a paper towel, then add all the sauce ingredients B (soy sauce, mirin, sugar, ginger, and miso). Stir to coat the meat thoroughly and simmer until the sauce thickens and clings to the pork.
