  • 1 oz shredded mozzarella or pizza cheese (30g)
  • 6 fresh shiso leaves (ohba)
  • 1 tsp sesame oil (for pan-frying)

    In a bowl, add the warm cooked rice and all the (A) ingredients. Mix gently until the rice is evenly coated and glossy.

    Divide the seasoned rice into 6 equal portions. Flatten one portion slightly in your hand (using plastic wrap makes this easy!), place a pinch of cheese in the center, and shape it into a firm triangle, making sure the cheese is sealed inside.

    Wrap one fresh shiso leaf around each rice ball.

    Heat 1 tsp. of sesame oil in a frying pan over medium-low heat. Place the rice balls in the pan and fry for about 5 minutes on each side, or until they develop a beautiful, deep golden-brown crust.
