- 2 chicken tenderloins (120g/ 4.2 oz.)
- 1 cucumber (100g/ 3.5oz.)
- 1tbsp sake
- 1tbsp ponzu
- 1tbsp toasted white sesame seeds
- 1tsp soy sauce
- 1tsp sugar
- 1tsp sesame oil
- a pinch of salt

Remove the tendons from the chicken tenderloins, place them in a microwaveable dish, and pour the sake over them. Cover with plastic wrap and microwave at 500W for 2 minutes and 30 seconds. Let the chicken cool to room temperature, then tear into pieces.

Thinly slice the cucumber, sprinkle with a pinch of salt, and let sit for 5 minutes. Squeeze out the excess moisture.

In a bowl, combine the chicken, cucumber, ponzu, sesame seeds, soy sauce, sugar, and sesame oil. Toss well to mix.
