- 1tbsp cooking oil
- 4tbsp ponzu
- 4tsp sugar

Season the chicken thighs with salt and pepper. Let them sit until they reach room temperature, then coat with cake flour. (Making shallow cuts in thicker parts helps it cook evenly.)

Add cooking oil to a frying pan. Place the chicken skin-side down before turning on the heat. Cook over medium-low heat for 13 to 15 minutes, flipping to brown both sides nicely.
