Japanese-Style Comfort Food!
Egg Zōsui (tamago zōsui, 卵雑炊) is the basic form of the traditional Japanese rice dish zōsui (rice porridge), made by simmering cooked rice in dashi soup stock, then pouring in ribbons of beaten egg to create comforting, soft-set eggs with rice.
Zōsui is a cooking method developed to utilize leftover rice deliciously and without waste, and is a dish commonly eaten when not feeling well, you’ve over-indulged the previous day, or when you need something that will warm up your body.
This recipe is characterized by its simplicity, taking only 5 minutes to cook. Its simple seasoning, enhanced by Japanese-style dashi, makes it a beloved light meal that can be quickly made when you want to eat something, such as for a late-night snack or when feeling slightly hungry.

When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 1 cup cooked Japanese short-grain rice (180g)
- 2 eggs
- A1.5 cups water
- A2 tsp soy sauce
- A2 tsp Japanese-style dashi powder (stock base)
- A0.25 tsp sugar
- Asalt, to taste
- chopped green onion, for topping to taste
- shredded nori seaweed (kizami nori), for topping to taste

Beat the eggs in a bowl. Place the cooked rice in a colander and rinse it under running water, then drain.

Add the rice and the (A) ingredients (water, soy sauce, dashi powder, sugar, and salt) to a pot and simmer over medium-low heat.

Once boiling, pour a thin ribbon of the beaten eggs into the pot in a spiral motion, moving from the edge of the pan toward the center. Cook until your desired consistency is reached.

Serve in bowls and top with chopped green onion and shredded nori seaweed.

・You can also add ingredients like leafy greens, Chinese cabbage, shiitake mushrooms, or enoki mushrooms to enhance the flavor.
・Both cold leftover rice and warm cooked rice are fine to use.
・The seasoning is relatively strong, so if you prefer a lighter taste, reduce the amount of each (A) ingredient.
