  • 9 oz mix of ground beef and pork
  • 0.5 cup onion, minced (1/2 of a whole onion)
  • 2 tsp butter
  • 3 slices of melting-type cheese

    4 tbsp panko bread crumbs

    1 tbsp Japanese mayonnaise

    0.25 tsp coarse-ground black pepper

    2 pinches of salt
  • 1 tsp vegetable oil

    2 tbsp mirin (sweet rice wine)

    1.5 tbsp soy sauce

    1 tbsp sake (or white wine)

    0.5 tsp minced garlic (or paste from a tube)

    Place the minced onion in a microwaveable container and top with the butter. Heat in a 600W microwave for 2 minutes without plastic wrap. Stir, heat for another 2 minutes, and let it cool slightly.

    Cut 1 slice of the melting-type cheese in half. Place one half on top of each of the remaining 2 cheese slices so that it is flush with one edge. Fold the full cheese slice in half over the ½-slice so that it makes a 3-layered piece.

    Fold the 3-layered cheese into thirds. Make two of these cheese packets.

    Place the ground meat, the onion from Step 1, and the (A) ingredients (egg, panko bread crumbs, mayonnaise, chicken consommé powder, salt, and pepper) into a bowl and knead until sticky.

    Divide the mixture into 4 equal portions. Pass each portion back and forth between your palms to remove any trapped air. Shape into 4 oval patties approx. ½-inch-thick (1 cm). Place the cheese packet from Step 3 onto 2 of the patties.

    Sandwich the cheese with the remaining 2 patties, pinch the seams to seal, and apply a little oil to your hands to smooth the surface completely, ensuring that there are no gaps.

    Dust the seams with all-purpose flour (as needed). Let them rest in the refrigerator for 30 minutes.

    Heat 1 tsp. of vegetable oil in a frying pan over medium-low heat and add the patties. Once both sides are browned, add 2 tbsp. of water, cover with a lid, and cook over low heat for about 7 minutes.

    Mix together the (B) ingredients (mirin, soy sauce, sake, sugar, and garlic). Add this sauce to the pan, increase the heat to medium-low, and simmer to reduce the sauce. Spoon the sauce over the Hamburg steaks several times.

Tips & Notes

・This can also be made with 1 slice of cheese per patty.
・Tips for success: Mince the onion as finely as possible. Knead the meat mixture well until sticky and remove air. Apply oil to your hands to smooth the surface of the patties so that there are no gaps. Dust the seams with flour. Let it rest in the refrigerator.
・Be careful not to make the patties too wide and thin or the cheese may leak out from the sides.
・If you are unsure about whether the patties are cooked through, you can lightly microwave them before making the sauce.
