The umami and richness of napa cabbage kimchi are maximized in this addictive fried dumpling!
Rich ground pork and kimchi are combined with the pleasant crunchy texture of bean sprouts to make a hearty dish. The wrappers are fried until crispy and fragrant; you won't be able to stop eating them after just one bite!

When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 25 gyoza wrappers (dumpling wrappers)
- 5 oz ground pork
- 0.5 cup napa cabbage kimchi (3 oz. / 80g)
- 3/4 cup mung bean sprouts (2.5 oz. / 70g)
- A1 tbsp sake (or white wine)
- A1 tsp potato starch (katakuriko, or cornstarch)
- A1 tsp oyster sauce
- A0.5 tsp sugar
- A1 tsp sesame oil
- frying oil, as needed
INSTRUCTIONS

Finely chop the napa cabbage kimchi. Cut the bean sprouts into approx. 1-inch-long pieces (2–3 cm).

In a bowl, place the ground pork and the (A) ingredients (sake, potato starch, oyster sauce, sugar, and sesame oil) and knead well.

Add the kimchi and bean sprouts from Step 1 and mix thoroughly again.

Place a spoonful of the filling from Step 3 in the center of a gyoza wrapper, apply a small amount of water to the rim of the wrapper, and press the edges together to seal.

Make a total of 25 dumplings in the same way.

Pour frying oil into a pot to a depth of about 1 to 1 ¼ (3 cm). Heat to 340°F / 170°C over medium heat, then add the dumplings. Fry for about 3–4 minutes until they are crispy and golden brown.

Tips & Notes
・The seasoning is strong enough that you can eat them without dipping sauce.
・Soy sauce can be substituted for the oyster sauce in (A).
・If the bean sprouts are too long, the wrappers may tear when wrapping, so it is best to cut them shorter beforehand.
・If you are using sweet kimchi, omit the sugar in (A).
・If using large gyoza wrappers, this recipe will make about 20 dumplings.
