- 3 eggs
- 1 tbsp sesame oil

- A1 tbsp vinegar
- A2 tsp soy sauce
- A1 tsp oyster sauce

- A0.5 tsp chicken stock powder (granulated)
- A1 tsp potato starch (katakuriko, or cornstarch)
- 1 tsp vegetable oil
- chili oil (rayu), to taste
- small green onion (konegi), to taste

Cut the tomato into 8 wedges. Beat the eggs. Mix ingredientsA water0.4cup、vinegar1tbsp、soy sauce2tsp、oyster sauce1tsp、sugar1tsp、chicken stock powder0.5tsp、potato starch1tspin a small bowl.

Heat the sesame oil in a frying pan over medium-high heat. Pour in the beaten egg and mix in a broad, sweeping motion with chopsticks. Remove the egg once it is semi-set (soft scrambled).

Add 1 tsp. of vegetable oil to the same pan and heat over medium heat. Add the tomato and fry for about 1 minute without moving it. Flip and fry for another 1 minute, then remove.

Briefly stir the (A) sauce to keep the potato starch from settling, then pour into the frying pan. Cook over medium-low heat and continue stirring with a wooden spatula for about 1 minute until the sauce thickens. Turn off the heat.

Place the tomato and egg into a serving bowl and pour the sauce over them. Drizzle with chili oil and scatter with small green onion, if desired.
