Namul is a Korean-inspired side dish of seasoned vegetables that has become widely popular in Japan. Flavored simply with sesame oil, salt, soy sauce, and garlic, Namul enhances the natural taste of vegetables while adding a nutty aroma and umami.
In Japan, colorful Namul dishes are commonly made with spinach, bean sprouts, carrots, and bracken fern (zenmai). They are often served as side dishes or as the essential topping for bibimbap. With its refreshing flavor and nutritious balance, Namul has taken root in Japan as a staple of home cooking.
This recipe transforms classic bean sprout Namul into a satisfying main dish by adding tender slices of Shabu-shabu pork. It’s simple, refreshing, and packed with flavor—perfect on its own or served with your favorite vegetables.
Personally, I love pairing it with avocado and tomato sprinkled with sesame oil and salt as their flavors go perfectly with the pork Namul.

When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 7 oz thinly sliced pork (for Shabu-shabu)
- 1 bag mung bean sprouts
- 4 cup water
- 1 tbsp. sake
- A2 tsp. chicken bouillon powder
- A1 tsp. vinegar
- A1/2 tsp. sugar
- A1 tsp. grated garlic (from a tube)
- A1 tbsp. ground sesame seeds
- A1 tbsp. sesame oil
- Asalt, to taste
- Achopped green onion, for garnish
INSTRUCTIONS
Preparation
In a pot, bring 4 cups of water and 1 tbsp. sake to a boil. Cut pork slices into bite-sized pieces.- 1
Once the water is boiling, reduce to low heat and add the pork. Cook until the meat is no longer pink,then drain.

Rinse bean sprouts, place in a microwave-safe container, cover, and microwave at 600W for 3 minutes. Let sit for 1 minute, then drain well.

In a bowl, combine pork and bean sprouts with A ingredients (bouillon, vinegar, sugar, garlic, sesame seeds, sesame oil, and salt). Mix well.

Top with chopped green onion and serve.
