The first time I made it, my children asked, “Are these chicken nuggets?”—but all I did was cut chicken tenderloins into bite-sized pieces. They taste so much like chicken nuggets that they disappear in no time.
They’re bite-sized, tender, and tasty even when cooled, making them perfect for lunch boxes too.

When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 10 oz chicken tenderloins
- A1 tbsp. sake
- A1 tbsp. Japanese mayonnaise
- A1 tsp. sugar
- A1 tsp. chicken bouillon granules (consommé powder)
- A1 tsp. soy sauce
- A1/2 tsp. grated garlic (from a tube)
- A2 pinches of salt
- A3 tbsp. potato starch
- A6 tbsp. vegetable oil

Remove the tendons from the chicken tenderloins and slice each one into 4 diagonal pieces.

Place the chicken in a bowl or a resealable plastic bag. Add A ingredients (sake, mayonnaise, sugar, chicken bouillon, soy sauce, garlic, and salt) and massage until the bouillon dissolves. Mix in the potato starch.

Heat the oil in a skillet over medium heat. Cook the chicken pieces in batches for 4–5 minutes, until golden brown on both sides. Drain excess oil.
