This simple carrot side dish uses just one vegetable, yet it’s hearty and satisfying thanks to a creamy sesame–mayonnaise dressing. The natural sweetness of carrots makes it kid-friendly, even for picky eaters.
It also works perfectly as a bento lunchbox item or to add color to a one-plate meal. The flavor improves after resting, and it keeps well—3 days in the fridge or up to 3 weeks frozen—making it a great make-ahead option.

When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 2 carrots , julienned
- 1 tsp. sesame oil
- A1 tbsp. sake (or dry white wine)
- A1 tbsp. mirin (or honey diluted with a little water)
- A1 tsp. chicken bouillon granules
- B1 tbsp. mayonnaise
- B1 tsp. toasted sesame seeds
- B1 tsp. ground sesame seeds
INSTRUCTIONS

Prep: Slice off the carrot tops and ends at an angle. Use a slicer or knife to cut into thin matchsticks.

Heat sesame oil in a skillet over medium heat. Add the carrots and stir-fry until lightly softened. Lower the heat, then add A ingredients (sake, mirin, and bouillon) in that order, stirring well. Cook until the liquid evaporates.

Transfer the carrots to a bowl and let cool slightly. Add B ingredients (mayonnaise, toasted sesame, and ground sesame) and mix well.

Serve warm or chilled. Great as a quick side dish or packed in a lunchbox.

Tips & Notes
・Don’t overcook the carrots; add the seasonings once they’re just starting to soften, then switch to low heat.
・Let the carrots cool before adding B so they absorb flavor without becoming soggy.
・For frozen portions, you can pack them straight into a bento box without thawing first.
