    Prep the spinach: Cut into 1 ½-inch-long (4 cm) pieces.Place in a microwave-safe bowl, cover loosely, and microwave at 600W for 1 minute 30 seconds (or just until wilted). Rinse under cold water and squeeze out excess moisture. Thinly slice the onion. Beat the egg. In a small bowl, mix B ingredients (water + potato starch) to make a slurry.

    Sauté the onion: Heat the oil in a pot over medium heat. Add the onion and cook until tender.

    Make the broth: Add A ingredients (water, consommé, chicken bouillon, and sugar) and bring to a gentle boil. Add the spinach. Season with a pinch of salt to taste, then stir in the slurry.

    Form the fluffy egg ribbons: When the soup returns to a simmer, slowly drizzle in the beaten egg, stirring in broad strokes. Turn off the heat as soon as soft ribbons form.
