When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 2 tomatoes , cut into bite-size wedges
- 1 can (2.5 oz. / 70 g) tuna in oil (do not drain)
- 1 large garlic clove, minced
- A1/4 tsp. sugar
- A2 tbsp. grated Parmesan cheese
- AGreen onions (scallions), to taste, thinly sliced

Preparation
Add the tomato wedges to a mixing bowl. Mince the garlic.

In a skillet over medium heat, add all the oil from the tuna can and sauté the garlic until lightly golden. Remove from heat.

Let the garlicky oil cool slightly, then pour it into the bowl. Add the tuna and A ingredients (sugar and Parmesan). Gently toss, taking care not to crush the tomatoes.

Plate and sprinkle with green onions to finish.

Add a pinch of salt if you’d like a bit more seasoning.
Extra Parmesan and freshly ground black pepper make for great toppings.
Chill before serving for a refreshing finish.
