When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.

  • 2 oz thinly sliced pork (pork offcuts or shoulder)
  • 2/3 cup mung bean sprouts, loosely packed
  • 1 /2 pack silken tofu (or firm tofu), cubed
  • 2 tsp. sesame oil
  • 1/2 tsp. grated garlic (or about 1 inch from paste tube)
  • 1/2 tsp. grated ginger (or about 1 inch from paste tube)
  • salt and pepper, to taste
  • 2 tbsp. miso paste

    1 tsp. dashi granules (such as Hondashi)

INSTRUCTIONS

    Cut the pork into bite-sized pieces. Heat sesame oil in a saucepan over medium heat. Add the pork and cook until mostly done. Add the bean sprouts, garlic, and ginger, and stir-fry for 1–2 minutes. Season with salt and pepper.

    Add the ingredients from (A) (water and dashi) and bring to a boil. Add the cubed tofu and simmer for about 3 minutes. Turn off the heat and dissolve the miso paste into the soup.
