A lighter, easier take on lasagna — made with tofu instead of pasta!
This simple, comforting dish is prepared using just a microwave and a toaster oven, with no need for a stovetop or oven.
The tofu layers stay soft and moist, soaking up delicious flavors from the rich meat sauce and creamy white sauce.
Be sure to drain the tofu well to achieve the perfect texture. Serve it straight from the baking dish for a cozy, shareable meal!

- 5 oz ground pork
- 1 /4 onion, finely chopped
- 1 /4 carrot, finely chopped
- 1 block of firm tofu
- 8 tbsp. shredded mozzarella or pizza cheese
- A1 1/2 tbsp. ketchup
- A2 tsp. Worcestershire sauce
- A1 tsp. sugar
- A1 tsp. soy sauce
- A1 tsp. mirin
- A1/2 tsp. chicken bouillon granules
- A1/2 tsp. garlic paste (about 2–3 cm from a tube)
- AA pinch of salt and pepper
- 2 tbsp. butter (White Sauce)
- 2 tbsp. all-purpose flour (White Sauce)
- 3/4 cup soy milk (or regular milk) (White Sauce)
- 1/2 tsp. chicken bouillon granules (White Sauce)
- Salt and pepper, to taste (White Sauce)
INSTRUCTIONS

Slice the tofu block in half horizontally, then cut each piece into 3 thin slabs (6 total). Place on paper towels in a tray, cover with more paper towels, and set a weight on top. Let drain for 30 minutes to remove excess moisture.

Combine pork, onion, carrot, and (A) ingredients (ketchup, Worcestershire, sugar, soy sauce, mirin, bouillon, garlic, salt and pepper) in a microwave-safe bowl. Cover loosely with plastic wrap and microwave (600W) for 4 minutes. Stir well, then microwave uncovered for another 2 minutes. Stir again. (Meat sauce complete.)

In another bowl, combine butter and flour. Microwave (600W) for 40 seconds, then whisk until smooth. Gradually add soy milk, whisking continuously to combine. Add chicken bouillon, salt, and pepper. Microwave (600W) for 3 minutes, then stir until creamy. (White sauce complete.)

In a heatproof baking dish, layer 1/3 of the white sauce, 1/2 of the meat sauce, and half of the tofu slices. Repeat once more, ending with the remaining white sauce on top. Sprinkle shredded cheese over the top.

Toast in a toaster oven at 480°F (250°C) for about 10 minutes, until golden brown. Sprinkle with dried parsley if desired and serve warm.
