  • 1 /8 onion, thinly sliced against the grain
  • 4 slices thin-cut bacon (or 2 full slices), cut into ½-inch strips
  • 1 /2 pack shimeji mushrooms, trimmed and separated
  • 2 tsp. butter
  • 1/2 tsp. fresh, minced garlic

    2 tsp. soy sauce

    1 tsp. granulated consommé (or chicken bouillon powder)

    freshly-ground black pepper, to taste

INSTRUCTIONS

    Thinly slice the onion against the grain. Cut the bacon into 1/2-inch pieces. Trim off the bottoms of the shimeji mushrooms and separate them into small clusters.

    In a pot, melt the butter over medium heat and add the onions. Once melted, reduce to low heat and sauté for about 5 minutes, stirring only occasionally, until the onions turn golden brown.

    Add the bacon, shimeji mushrooms, and garlic paste. Sauté lightly until fragrant.

    Add the A ingredients (water, soy sauce, consommé, salt), bring to a boil, and then reduce to low heat. Simmer for 3 minutes. Finish with freshly-ground black pepper to taste.

Tips & Notes

Slice the onion against the grain (perpendicular to the fibers) to help it become meltingly soft.
Avoid stirring too often while sautéing the onions. Let them caramelize for a deeper flavor and quicker browning.
