- 5 oz silken tofu
- 2 eggs, beaten
- salt and pepper, to taste
- chopped green onions, for garnish (optional)
- A1 2/3 cup water
- A1 tbsp. sake
- A1 tbsp. mirin
- A2 tsp. chicken bouillon powder (or granulated chicken soup base)
- A1/2 tsp. soy sauce
- A1/4 tsp. salt

Cut the chicken breast into small pieces and season with salt and pepper. Cut the tofu into bite-sized cubes.

In a small saucepan, combine all A ingredients (water, sake, mirin, bouillon, soy sauce, and salt) and bring to a gentle boil over medium heat. Add the chicken and tofu, then simmer for 3 minutes.

Slowly drizzle in the beaten eggs in a thin stream, then immediately turn off the heat. Wait a few seconds until the eggs start to set, then gently stir. Serve in bowls and garnish with chopped green onions, if desired.
