When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.

  • 3/4 cup all-purpose flour
  • 1tbsp sugar
  • a pinch of salt
  • 1tsp olive oil
  • 2/3 cup milk
  • 3/4 cup shredded pizza cheese
  • 1.5 bacon slices
  • spicy mustard Japanese mayo (to taste; use regular mayo for kids)

DIRECTIONS

  • Preparation
    Cut the bacon slices in half.

    In a bowl, whisk together flour, sugar, and salt. Add olive oil and milk, whisking until smooth.

    Lightly oil a rectangular omelet pan (or small skillet). Pour in a ladleful of batter and spread evenly.

    Place bacon, shredded cheese, and a drizzle of spicy mayo on top.

    When the surface of the batter looks dry and lightly browned underneath, roll it up from one end to the other.

Tips & Notes

・For kids, simply swap the spicy mustard mayo for plain Japanese mayonnaise.
・Works best in a rectangular tamago-yaki pan, but a small round nonstick skillet also works fine.
