- 0.5tsp salt
- a dash of vinegar
- 4 daikon radish slices (about 1/8-inch thick; 3-4mm)
- shiso leaves (oba leaves, for serving)

Shred the red cabbage, sprinkle with salt, and mix. Let it sit for about 10 minutes to draw out the moisture.

Squeeze the cabbage tightly with your hands to extract the purple juice into a bowl. (Keep the squeezed cabbage! It's perfect for a quick salad or coleslaw 🥗).

Divide the extracted purple juice evenly into two small bowls. Add a dash of vinegar to one of the bowls—watch it instantly turn a beautiful magenta pink! 🪄

Cut the daikon radish slices using a small flower-shaped cookie cutter. Submerge half of the flowers in the purple juice and the other half in the pink juice. Cover and let them soak in the refrigerator overnight.
