This surprisingly simple dish comes together easily. Just cook the chicken, then sprinkle it with the umami-boosting cheesy seaweed salt! No flour needed, so it’s low-carb friendly, too.
The richness and fragrance of the grated Parmesan cheese combined with aromatic dried green seaweed are a perfect match for pan-fried chicken. This dish is highly satisfying and goes excellently with both rice and drinks!

When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 10.5oz boneless chicken thighs (about 3 thighs, 300g)
- A1tbsp sake (or white wine)
- A1/3tsp salt
- Apepper, to taste
- A1/2tsp grated garlic (or 2cm garlic paste from a tube)
- B1tbsp grated Parmesan cheese
- B1/2tsp dried green laver (aonori seaweed flakes)

Cut the chicken thighs into bite-sized pieces and rub in the ingredients A sake1tbsp、salt1/3tsp、pepper, to tasteNA、grated garlic1/2tsp.

Heat 1/2 tbsp. of vegetable oil in a frying pan over medium heat. Arrange the marinated chicken in the pan skin-side down. Fry for 3 minutes, flip, and fry the other side for another 3 minutes.

Remove the chicken onto a paper towel to drain excess oil. Place the chicken into a plastic bag, add the ingredients B grated Parmesan cheese1tbsp、dried green laver1/2tsp, and shake to coat.

Tips & Notes
・Customizations:
ーIf you dislike grated Parmesan cheese, you can omit it. In that case, increase the salt in the marinade slightly.
ーYou can omit the garlic if you dislike it.
・Both refrigeration and freezing should be done after the dish is completed.
・A toaster oven is best for reheating! If you don't have one, place it on a microwaveable plate lined with a paper towel and heat in the microwave without plastic wrap. (If frozen, transfer it to the refrigerator to defrost naturally first!)
・I used a 10.2-inch (26 cm) frying pan.
・Shelf life: 3–4 days in the refrigerator, 30 days in the freezer.
