When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.

  • 3/4 cup cake flour
  • 2tsp. matcha powder
  • 1/2tsp. baking powder
  • 1/4tsp. baking soda
  • 1 3/4 oz granulated sugar (adjust to taste)
  • 3 1/2 oz water
  • 1tbsp. vegetable oil
  • sweetened azuki beans (to taste)

DIRECTIONS

    In a bowl, sift together the flour, matcha powder, baking powder, and baking soda. Add granulated sugar and mix.

    Add water and mix until slightly lumpy, then stir in the vegetable oil.

    Fill muffin cups about 2/3 full with batter, then top with sweetened azuki beans.

    Place in a steamer with boiling water and steam over high heat for 8–10 minutes.
