  • 2 lightly salted salmon fillets (about 5 oz. each)
  • 8 oz potatoes
  • 1 tbsp. soy sauce
  • 1 tbsp. unsalted butter
  • freshly-ground black pepper, to taste
  • chopped parsley, for garnish (optional)

INSTRUCTIONS

    Wash the potatoes well and cut into bite-sized pieces. Place them in a microwave-safe bowl, cover loosely with plastic wrap, and microwave at 500W for 5 minutes (or until tender). Cut the salmon into bite-sized pieces as well.

    Heat the butter in a frying pan over medium heat. Add the potatoes and salmon, and sauté until both are lightly browned and the salmon is fully cooked.

    Drizzle soy sauce over the mixture and stir gently to coat. Sprinkle with black pepper to taste.
