- 12oz chicken thighs (skin-on, 350g)
- 2 boiled eggs
- 1tsp vinegar
- A0.6cups water (150ml)
- A3tbsp mirin
- A3tbsp soy sauce
- A1tbsp sake
- A1tbsp sugar

Cut chicken thighs into bite-size pieces with kitchen scissors and place in a pot. Add all (A) ingredients (water, mirin, soy sauce, sake, and sugar), stir lightly, and simmer over medium heat.

While the chicken simmers, peel the boiled eggs. When the sauce becomes glossy, add the eggs and roll them around in the sauce for about 2 minutes.

Finish by adding vinegar and mix briefly. Serve warm.
