步骤

    将每片蝴蝶形沙丁鱼片切成三段。只使用鱼肉——如果还附有鱼头和鱼骨,请将其丢弃。

    将各½茶匙的盐和鲜味调味料均匀撒在沙丁鱼上。静置5分钟。将一壶水烧开。在小碗中混合酱油、味醂、清酒和糖。

    将热水倒在沙丁鱼上,冲洗掉腥味(霜降)。倒掉水并重复一次。用厨房纸巾将沙丁鱼擦干。
