- 1/4 cup 土豆淀粉(根据肉的大小调整用量)
- 3 tbsp. 食用油(植物油或菜籽油)
- A2 tbsp. 醋
- A2 tbsp. 料酒(或干白葡萄酒)
- A2 tbsp. 味醂
- A2 tbsp. 糖
- A1 1/2 tbsp. 酱油

准备工作
在猪排边缘划刀以防止卷曲,两面均匀涂抹盐和胡椒粉。

将土豆淀粉放入塑料袋中。每次放入一块猪排,密封后摇晃均匀裹粉。重复操作直到所有猪排都裹上淀粉。

在平底锅中加热油。放入猪排并盖上锅盖。煎至一面金黄酥脆后翻面,再次盖上锅盖,用小火煎1分钟。

揭开锅盖,用厨房纸巾擦去多余的油。加入A组所有调料(醋、料酒、味醂、糖和酱油),再次盖上锅盖,煮2-3分钟。中途翻面,使两面均匀裹上酱汁。
烹饪安全注意不要用大火,否则酱汁可能会蒸发并烧焦。
