  • 0.25 head of cabbage, chopped
  • 0.5 medium onion,sliced into wedges
  • 1 Japanese long onion,sliced diagonally

    1 tbsp. tenmenjan (sweet bean sauce)

    1/2 tbsp. doubanjiang (chili bean paste)

    1/2 tbsp. sesame oil

    1 garlic clove, grated

  • 1 tbsp. vegetable oil (for frying)
  • pinch of salt (for seasoning onions)
  • extra sesame oil, for finishing (optional)

    Prep ingredients:
    Cut the pork into bite-sized pieces. Chop cabbage into rough pieces, cut the onion into wedges, and slice the Japanese long onion diagonally.

    Cook vegetables:
    Heat 1 tbsp. vegetable oil in a large pan over medium heat. Add the onion with a pinch of salt, and cook until translucent. Add the cabbage and long green onion, and stir-fry briefly.

    Add pork:
    Add the pork and stir-fry over high heat until nicely browned. Sear the pork without moving it too much to allow it to carmelize; the vegetables should also brown slightly.

    Sauté aromatics:
    Push everything to the side of the frying pan and add A ingredients (tenmenjan, doubanjiang, sesame oil, grated garlic) to the open space in the middle of the pan. Cook over medium heat until fragrant.

    Finish with sauce:
    Mix together the Sauce ingredients B in a bowl (mirin, sake, potato starch, and black pepper) and add to the frying pan. Stir everything together, allowing the sauce to thicken and evenly coat the ingredients. Finish with an extra drizzle of sesame oil, if desired.
