Chicken breast is no longer dry and boring! This spicy chicken (Yodare Dori) turns out surprisingly moist and tender. By simply microwaving the chicken and letting residual heat do the rest, this is a simple and healthy dish that anyone can make.

The combination of spices is truly “mouthwatering!” Give this Japanese-Chinese dish a try!

  • 10.5oz chicken breast (300g)
  • 6 inches of Japanese long green onion (or scallions)

    1tbsp sake (or white wine)

    1.5tbsp soy sauce

    1.5tbsp sesame oil

    1tbsp toasted sesame seeds

    1/2tbsp reserved broth (from cooking the chicken in the microwave)

    1/2tsp chicken stock powder (or chicken bouillon)

    1/2tsp tobanjan (chili bean paste)

    1/3tsp grated garlic (or paste from a tube)

    1/3tsp grated ginger (or paste from a tube)

    4 drops of chili oil (rayu)
  • chopped green onion (to taste)

作り方

  • 下準備
    Remove the skin from the chicken breast and pierce both sides 20–30 times with a fork.

    Place the chicken breast in a microwave-safe container, rub in the (A) ingredients (sake and sugar), and cover tightly with plastic wrap, pressing it directly onto the surface of the chicken. Let sit for 30 minutes.

    Rewrap loosely with plastic wrap, heat in a 600W microwave for 3 minutes, flip, and heat for another 2 minutes.

    Leave the door of the microwave closed and let it sit for 5 minutes to allow residual heat to finish cooking the chicken.

    Mince the long green onion and mix with (B) ingredients (soy sauce, vinegar, sesame oil, sugar, sesame seeds, broth, chicken stock powder, tobanjan, garlic, ginger, and chili oil) to make the sauce.

    Slice the chicken breast thinly, then arrange it on a plate.

    Drizzle the sauce from Step 4 over the chicken and sprinkle with chopped green onion to taste. Add tomato, shiso leaves, or fresh basil if desired.

・If you prefer a milder dish, use half the amount of tobanjan and chili oil.
・If you like spicy food, feel free to increase the amount of tobanjan and chili oil.
・When tested, the chicken in this recipe reached an internal temperature of 167°F (75°C) for 1 minute, but cooking times may vary depending on your oven. Please ensure the chicken is cooked through and adjust the cooking time as necessary.
