- 2 塩鮭の切り身
- 1/4 cup 酒 (半量に分ける)
- 1/2 小松菜 (ほうれん草で代用可)
- 4 卵
- 1 tbsp. サラダ油 (半量に分ける)
- ご飯 (適量)
- 刻み海苔 (飾り用)
- A1 tbsp. 白ごま
- A2 tsp. ごま油
- A1/2 tbsp. 醤油
- A1/4 tsp. 鶏がらスープの素
- B1 tbsp. マヨネーズ
- B1 tbsp. みりん
- B1/2 tbsp. 砂糖
- B1/2 tbsp. 醤油
作り方
下準備
鮭の切り身に酒大さじ2をふりかけ、10分置く。ペーパータオルで水気を拭き取る。

小松菜を3cmの長さに切る。小鍋でお湯を沸かし、40秒間青菜をさっと茹でる。水気を切り、流水で冷ます。余分な水分を絞り、ボウルでA(ごま、ごま油、醤油、鶏がらスープの素)と混ぜ合わせる。

卵をボウルに割り入れ、B(マヨネーズ、みりん、砂糖、醤油)と混ぜる。フライパンにサラダ油1/2大さじを中火で熱する。卵液を加え、半熟になるまでやさしく炒り卵にする。フライパンから取り出す。

同じフライパンに残りのサラダ油1/2大さじを熱する。鮭の切り身を皮目を下にして置き、2分間焼く。裏返して1分間焼く。残りの酒大さじ2を加え、蓋をして弱火で3分間蒸し焼きにする。取り出して大きくほぐし、骨と皮を取り除く。

温かいご飯を茶碗に盛る。味付けした小松菜、炒り卵、鮭フレークをのせる。お好みで刻み海苔を飾る。
