When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 2 medium potatoes, peeled and cut into thick matchsticks
- 2 1/2 cup roughly-shredded cabbage
- 4 oz thick-cut bacon, cut into short strips (sliced bacon is also fine)
- 2 garlic cloves, thinly sliced
- 1 tbsp. vegetable oil
- A1 tbsp. salted butter (about 10 g)
- A2 pinches of salt
- A1/2 tsp. soy sauce
- A1 tsp. aonori seaweed (dried green laver)
INSTRUCTIONS

Prep the ingredients.
・Cut potatoes into thick matchsticks.
・Cut the bacon into strips.
・Thinly slice the garlic.

Sauté the aromatics.
Heat 1 tbsp. vegetable oil in a frying pan over low heat.
Add bacon and garlic, then sauté slowly until lightly browned.
Remove bacon and garlic from the pan and set aside (leave the oil in the pan).
Note: Garlic burns easily—remove it first if it’s browning too quickly.

Steam-fry the potatoes.
Add potatoes to the same pan. Cover with a lid and cook over medium-low heat for 8–10 minutes, until soft and tender.
A bit of golden color on the edges is ideal.

Combine everything.
Return the bacon and garlic to the pan.
Add the cabbage and all A ingredients (salted butter, salt, soy sauce, aonori).
Stir-fry over high heat for 1–2 minutes until well combined and the cabbage is slightly wilted.

Serve.
Transfer to a plate and sprinkle with extra aonori for a beautiful finish.

Tips & Notes
・We used Green Ball cabbage, a sweet and tender variety.
・The salt content from the bacon and salted butter is enough—just two pinches of added salt is ideal.
・Add extra potatoes for a more filling version.
・Soy sauce is meant to add a subtle hint of flavor —don’t overdo it! If it tastes under-seasoned, add more salt, not soy sauce.
