- 12 oz. chicken breast
- panko bread crumbs, as needed
- A2 tbsp. Japanese mayonnaise
- A1 tbsp. soy sauce
- A1 tbsp. sake (or white wine)
- A1/2 tbsp. sugar
- A1/2 tsp. Japanese-style dashi powder (stock base)
- A1/2 tsp. grated garlic (or garlic paste from a tube)
- Aa pinch of salt

Cut the chicken breast in half, then slice it into bite-sized pieces about ½-inch-thick.

Place the chicken breast and the (A) ingredients (mayonnaise, soy sauce, sake, sugar, dashi powder, garlic, and salt)into a plastic bag, rub them into the chicken, and let sit for about 10 minutes.

Spread the panko bread crumbs on a tray and firmly press them onto the chicken.

Pour about oil into a frying pan about ½-inch-deep and heat over medium heat. Pan-fry the chicken. (Flip occasionally.)

Remove the cutlets once they turn golden brown.
