  • 3 deboned, unsalted mackerel (saba) fillets

    5 tbsp. sake

    3 tbsp. mirin

    3 tbsp. sugar

    2 1/2 tbsp. miso
  • A
    1 tbsp. soy sauce

INSTRUCTIONS

  • Preparation
    ・Cut the deboned, unsalted mackerel fillets in half and make diagonal slits in the skin.
    ・Thinly slice the ginger.

    Bring the (A) ingredients (water, sake, mirin, sugar, miso, and soy sauce) and the sliced ginger to a boil, then add the mackerel.

    Place a drop-lid over the fish (or use parchment paper) and simmer over medium heat for 10–12 minutes. (Occasionally spoon the simmering liquid over the fish.)
