- 14 oz chicken breast
- 3 tbsp. potato starch (katakuriko, or cornstarch)
- A1 tbsp. Japanese mayonnaise
- Asalt and pepper, as needed
- A1 tsp. sugar
- A1/2 tbsp. sake
- B3 tbsp. sweet chili sauce
- B2 tbsp. Japanese mayonnaise
- B1 tsp. lemon juice
- B1/2 tsp. condensed milk
INSTRUCTIONS
Preparation
Slice the chicken breast in half lengthwise, then cut into approx. ½-inch-thin diagonal pieces (1 cm).

Add the (A) ingredients (1 tbsp. mayonnaise, salt and pepper, sugar, and sake) into a plastic bag with the chicken and rub the bag to mix everything together. Let sit for 10 minutes.

Add the potato starch and shake the bag to coat the chicken evenly.

Pour oil into a frying pan to a depth of about ¼ inch (5mm) and heat over medium heat. Add the chicken from Step 2 and pan-fry.

Flip the chicken occasionally, and once it turns golden brown, remove it and drain the oil.

Mix the (B) ingredients (sweet chili sauce, 2 tbsp. mayonnaise, lemon juice, and condensed milk) to make the sauce.
