An Addictive Recipe Perfect as an Extra Side Dish
This crunchy and crispy Enoki Mushroom Dashi Karaage is a new style of Karrage that boasts an irresistible texture like potato chips and a concentrated dashi (Japanese soup stock) umami – a truly addictive flavor!
With almost no prep time, it’s a quick fried dish that you can make when you need “just one more dish” for dinner or when unexpectedly entertaining guests.

When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 7 oz enoki mushrooms
- potato starch (katakuriko), as needed (can substitute cornstarch)
- A1 tbsp. sake
- A1/2 tbsp. soy sauce
- A1/2 tbsp. Shirodashi (white dashi stock)
- A1/2 tbsp. chicken stock powder (or chicken bouillon)
- A1 tsp. grated ginger (or ginger paste from a tube)

Cut off and discard the tough base from the enoki mushrooms and separate the mushrooms into small clusters.

Place the enoki mushrooms and the (A) ingredients (sake, soy sauce, Shirodasi, chicken stock powder, and ginger) into a plastic bag and lightly massage.

Drain any excess liquid from the bag, coat both sides of the mushrooms with potato starch, and then pan-fry in a shallow coating of oil over medium heat until both sides are golden brown. Remove the Karrage once cooked.

Tips & Notes
・Allowing the mushrooms to sit and marinate in the base will result in too strong of a flavor. Be sure to coat with potato starch and fry immediately.
・You can also sprinkle black pepper or salt on top, if desired.
