When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 10 chicken drumettes
- 1 tbsp. vegetable oil
- A3 tbsp. soy sauce
- A3 tbsp. sake
- A3 tbsp. mirin
- A2 1/2 tbsp. sugar
- A2 tbsp. water
- A1 1/2 tbsp. vinegar
INSTRUCTIONS

Heat 1 tsp. of vegetable oil in a frying pan over medium heat. Sear the chicken drumettes until golden brown (approximately 3–4 minutes).

Add the (A) ingredients (soy sauce, sake, mirin, sugar, water, and vinegar), place a drop-lid over the chicken (or use parchment paper), and then cover the pan with a lid. Simmer over medium-low heat for 25 minutes.

Flip the chicken after about 15 minutes.

Remove the lid for the final 4–5 minutes and simmer over high heat to reduce the sauce.
