- 1.25 large Japanese purple sweet potatoes
- 3 tbsp. mirin
- 4 bacon slices
- A2 1/2 tbsp. Japanese mayonnaise
- A2 tsp. milk
- A1 oz cream cheese
- Asalt and pepper, as needed

Preparation
Thoroughly wash the sweet potato and cut into 1/4-inch-thick rounds. Cut the rounds into quarters. Slice the bacon into thin strips.

Place the sweet potato in a microwave-safe container, drizzle with mirin, cover loosely with plastic wrap, and heat at 600W for 5–6 minutes.

In the meantime, heat a frying pan over medium heat and cook the bacon until crispy.

Remove the sweet potato from the microwave and roughly mash it with a potato masher or a fork.

Add the bacon and the (A) ingredients (mayonnaise, milk, cream cheese, salt and pepper), and mix well.

Sprinkle on additional black pepper, if desired.
