When scaling the recipe, the ratios of some ingredients may require slight adjustments. Adjust as necessary and season to taste.
- 1 /4 kabocha (Japanese pumpkin)
- 2 tsp. salted butter
- 2 tsp. sugar
- 4 tbsp. walnuts
- A3 oz cream cheese
- A2 tbsp. milk
- A1 tbsp. Japanese mayonnaise
- A2 tsp. maple syrup
INSTRUCTIONS
Preparation
Remove the seeds and pulp from the kabocha and cut it into bite-sized pieces. Peel off any skin that has blemishes or dirt.

Place the kabocha in a microwave-safe container, cover loosely with plastic wrap, and heat at 600W for 5 minutes. (If it is still hard, heat in 30-second increments until tender).

While the kabocha is still warm, add the salted butter and sugar, and lightly mash and mix with a potato masher.

Roughly chop the walnuts and heat them in a toaster oven for 3–4 minutes until fragrant.

Add the (A) ingredients (cream cheese, milk, mayonnaise, and maple syrup) and the walnuts, then mix to combine.

Tips & Notes
・If the kabocha that you are using is very soft, you can omit the milk.
・Try drizzling a little maple syrup on the top for a decadent finish!
