- 2 chicken thighs
- salt and pepper, as needed
- 2 tbsp. vegetable oil
- 1 1/2 tbsp. all-purpose flour
- A2 tbsp. salted butter
- A1 1/2 tbsp. soy sauce
- A1 tbsp. sugar
- A1 tbsp. mirin
- A1 tbsp. lemon juice
- A1 tsp. garlic paste (from a tube)
INSTRUCTIONS
Preparation
Season the chicken thighs with salt and pepper, then coat lightly and evenly in all-purpose flour.

Add 2 tsp. of vegetable oil to a frying pan and heat over medium heat. Place the chicken skin-side down. Occasionally press the meat firmly with a spatula while cooking. After 7–8 minutes, flip the chicken and continue to pan-fry until both sides are golden brown and crispy (Total cooking time: 12–15 minutes).

Once the chicken is fully cooked, wipe off any excess oil from the pan.

Keep the chicken skin-side up, add the (A) ingredients (butter, soy sauce, sugar, mirin, lemon juice, and garlic), and simmer for 1–2 minutes, allowing the sauce to reduce.
